No Bake Peanut Butter S’mores Bars

Merry Christmas and Happy Holidays! On this Throwback Thursday, I wanted to share a delicious treat that has been a crowd pleaser time and time again. These no bake peanut butter s’mores made their debut in my kitchen back in June and have warranted themselves many repeat appearances – most recently last night for Christmas Eve dessert! You cannot go wrong with the combination of peanut butter, chocolate, graham cracker, and marshmallow…ever.

No Bake Peanut Butter S’mores Bars

  • 1 cup butter
  • 1 cup peanut butter (smooth)
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 1/4 cup chocolate chips
  • 1/4 cup peanut butter (smooth)
  • 1 bag of mini marshmallows

Melt the butter and peanut butter together in a pot on the stove until smooth. Remove from heat. Stir in the graham cracker crumbs and powdered sugar. Mix until well combined and then pour into a baking dish (9×13 or 9×9) lined with parchment paper. Let cool. In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave for 20-25 second intervals, until melted and smooth. Pour the chocolate over the graham cracker layer and spread evenly using a spatula. After a few minutes, cover the chocolate layer with the mini marshmallows – you don’t want to wait too long to do this so that the marshmallows stick to the chocolate! Let set in the refrigerator for about 20 minutes or until you are ready to serve. Prior to serving, heat up the broiler and put the s’mores in the oven for just a few minutes to lightly brown the marshmallows. No Bake Peanut Butter S’mores Bars: Tara Tested, Tara, friends, and family approved! These bars are rich and delicious. I’ve played around with the recipe the couple of times I’ve made them…I substitute some of the butter with applesauce (this makes for a more moist bottom layer). About 1/2 cup or 1/4 cup of apple sauce instead of butter has worked well. You can also experiment with the chocolate layer and what type of peanut butter you use – Peanut Butter & Co’s Dark Chocolate Dreams peanut butter would be a delicious substitute for regular PB. These treats are great for any occasion, all year round. Enjoy!
